Ingredients:

  • 1 sheet of puff pastry
  • water
  • egg wash
  • 1 tbsp olive oil
  • 1 orange bell pepper, diced
  • 1 red bell pepper, diced
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 8 strips of bacon, cooked and diced
  • 1 cup of shredded cheddar cheese
  • six eggs
  • freshly chopped chives (for garnish)

Directions:

Step 1

To start, cut your pastry sheet into nine pieces. After this, put them into pairs using water. Place them in a parchment-paper-lined baking tray and brush each with egg wash. Once done, place them in a 350 degrees F oven and bake them for 20 minutes.

In the meantime, heat 1 tbsp olive oil, then saute one diced orange and red bell peppers. Season them with 1 tsp salt and 1/2 tsp ground black pepper. Mix well and cook the bell peppers until softened. Next, once the puff pastry is done baking, remove it from the oven and cut a square hole in each center.

Now, start assembling the breakfast cups. Divide the cooked bacon strips on the bottom followed by shredded cheddar cheese, the cooked bell peppers, and one whole cracked egg. Place the breakfast cups into a parchment paper-lined baking tray, put them back in the oven at 350 degrees F, and bake them for 20 minutes. After baking, sprinkle some more ground black pepper on top and garnish with freshly chopped chives. Serve and enjoy!
