This year is a year of rediscovering hobbies, talents, and/or interests that we’ve either forgotten or haven’t practiced in a while. Mine would be cooking and baking, with all of the spare hours I’ve been spending at home, I got a lot of opportunities to try cooking recipes I haven’t done before or recreate some that I’m familiar with. Recently, while browsing the internet for dishes that I can try cooking, I stumbled upon this recipe by one of my favorite YouTuber 매일맛나 delicious day. I immediately gave it a try and I ended up with a smile on my face and a full stomach!
Ingredients:
Baked Potatoes
- 3 or 1 lb. Potatoes, large
- 1 tsp (2g) Salt
- 1 tsp (1g) Chili powder (or paprika powder)
- 2 tsp (4g) Curry powder
- 3 tbsp. (21g) Olive oil
- 3 tbsp. (27g) Starch powder
- Rosemary (optional)
Fried Potatoes
- 3 or 1 lb. Potatoes, large
- 1 tsp (2g) Salt
- 1 tsp (1g) Chili powder (or paprika powder)
- 2 tsp (4g) Curry powder
- ½ cup (70ml) Water
- 3 tbsp. (27g) Wheat flour
- 5 tbsp. (45g) Starch powder (any kind)
Cream Cheese Sauce
- 6 tbsp. (50g ) Ricotta cheese
- 2 tbsp. (50g) Cream cheese
- 1 tbsp. (7g) Olive oil
- 2 tbsp. (14g) Water
- ½ tsp (1g) Oregano
- 2tsp (2g) Lemon zest
- 2 tbsp. (30g) Honey
- A pinch of pepper powder
Garnish
- Parmesan cheese
- Pepper powder
- Rosemary
- Salt (optional)
Directions:
Baked Potatoes
Slice and wedge the potatoes, then put them in a plastic bag, add chili powder or paprika, curry, salt, and olive oil. Shake the bag to mix the seasonings and potato wedges. Add starch powder then mix it again, place the potato wedges in a baking sheet lined with parchment paper, garnish with rosemary (optional). Bake it at 428°F for 20 minutes, after that turn the potatoes over and bake for additional 10 minutes.

Fried Potatoes
In a large bowl, combine the starch powder, wheat flour, salt, chili powder or paprika, curry, and water. Whisk the ingredients until well combined then add the potato wedges, mix them well until they are thinly coated. Deep fry.
Cream Cheese Sauce
In a mixing bowl or large measuring cup, combine the ricotta cheese, cream cheese, olive oil, honey, water, oregano, pepper powder, and lemon zest, then grind until well-combined. Pout the sauce mixture onto a plate, then stack the potatoes and garnish with parmesan cheese, pepper powder, rosemary, and/or salt (optional).
