Ingredients:

  • baby potatoes
  • 1 1/2 cups cold-pressed rapeseed oil
  • 10 cocktail cornichons (pickled in vinegar), cut into 1/2 cm plus 2 tsp liquid from the jar
  • 3 tbsp nonpareilles capers, plus 1 tbsp liquid from the jar
  • 1 tsp apple cider vinegar
  • 1 tsp English mustard
  • 1 tsp ground white pepper
  • 1/4 bag of dill, roughly chopped
  • 1/4 bag chives, finely chopped
  • 1 pack smoked salmon with cracked black pepper and lemon wedges (optional)
  • 2 bags of dolce romana lettuce (optional)

Directions:

Step 1

To start, steam the potatoes for 45 minutes or until fork tender. In the meantime, make the dressing. Combine 1 1/2 cups cold-pressed rapeseed oil, 2 tsp cornichon juice (from the jar), 1 tbsp caper juice (from the jar), and 1 tsp English mustard. Mix well until well combined. Back to the potatoes, cut each in half, and transfer them to a large mixing bowl. Drizzle the dressing over, then add 1 tsp ground white pepper, toss, and then leave for about ten to fifteen minutes.

Step 2

Next, add the chopped cornichons, 3 tbsp capers, chopped chives, and dill. Gently mix to combine. Once done, transfer to a serving plate, sprinkle some more white pepper, and scatter some capers, chopped cornichons, and chives over the top. Serve and enjoy!
