  • 5 medium russet potatoes
  • 2 tsp salt, divided
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp fresh parsley
  • 1 tbsp vegetable oil
  • 2 cups of shredded cheese blend
  • 5 strips of bacon, cooked and finely chopped
  • 12 large eggs

Step 1

To start, wash your potatoes thoroughly, then slice them thinly with a mandolin. After this, transfer them to a large bowl and add water. Toss the potatoes around to remove starch, then drain. Next, season the potatoes with 2 tsp salt, 1 tsp ground black pepper, 1 tsp paprika, and 1 tsp garlic powder. Mix them, ensuring every potato slice is properly coated. Set it aside.

Step 2

Next, grease the cups of your muffin tin with vegetable oil, then arrange the potato slices around the muffin cup like flower petals, then place one potato slice on the bottom. After this, divide the shredded cheese blend into each cup, then bake them at 400 degrees F for ten minutes.
