This potato chip cookie recipe by Catherine’s Plates on YouTube has a sweet and salty flavor. There’s a perfect crunch with the chips in this potato chip cookie recipe and the butterscotch adds a nice sweetness balance. However, you can use milk chocolate, white chocolate or any other chocolate for this recipe if you do not like butterscotch. I’d be interested in trying these cookies out because I do like sweet and salty together. They remind me of sweet and salty Chex mix. The end result of the cookies look amazing and spread out perfectly. I like flatter cookies instead of thick ones. Plus, they look nice and chewy.

Ingredients:

  • 1 cup butterscotch morsels (use any kind)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 cup brown sugar, packed
  • 1 cup butter, room temperature
  • 2 eggs
  • 2 cup potato chips
  • 1 white granulated sugar
  • 2 1/4 cup all-purpose flour

Directions:

First, combine the brown sugar, white sugar and butter in a bowl or a standing mixer for about 2 minutes or until fluffy. Add the beaten eggs and vanilla to the mixture. Overall, this potato chip cookie recipe is interesting because I’ve never heard of combining potato chips with cookie dough. However, Catherine had said you can use any type of chips for this recipe. I would use dark chocolate chips instead because it’s my favorite type of chocolate. I love chips separately so it would be a fun recipe to try out.
