This potato and onion frittata recipe by Laura in the Kitchen on YouTube is like a thick, round egg with potatoes and onions all in one bite.   • 1 Large Yellow Onion or 2 Smaller Onions, chopped
  • 1/4 cup of Olive Oil
  • 7 Eggs

  • 1/2 tsp of Smoked Paprika
  • 2 Tbsp of Chopped Parsley
  • 1 Tbsp of Chopped Chives

In conclusion, this is something I would make for my family because they like omelets and this would be different from an omelet. It would be a thick flat omelet with the potatoes and onions incorporated with the egg mixture. I don’t like my eggs fried hard, so I would rather scramble everything together.
