This homemade potato and cheese enchilada recipe by Simply Mama Cooks on YouTube is an easy meatless meal idea. First, start off by boiling the potatoes. Rinse them and add them whole into the pot. Cook until they are fork-tender. Peel the skin off and mash them with a fork. In a large bowl, add the mashed potatoes, sauteed onions, garlic powder, salt to taste, black pepper, and smoked paprika. Mix together. Then, add the shredded cheese. Next, once the enchiladas are rolled in the baking dish, pour the sauce all over the enchiladas and top off with cheese. Bake in a preheated oven at 375 degrees F. for about 35 to 45 minutes covered in foil. Let them sit for about 15 minutes before serving.
Overall, this would be a great recipe for vegetarians, but you can add meat to them if you like. It’s also a filling meal that you can serve with beans and Mexican rice.
