Did you know you can make a lot of things with dandelion blossoms? One of those is this poor man’s honey or also called dandelion jelly. It’s simple to prepare, only needs a few ingredients, and won’t even cost you a lot of money! Learn how to make it through this recipe by emmymade on Youtube.

Ingredients:

  • 2 cups of dandelion petals
  • 4 cups of boiling water
  • 2 tablespoons of fresh lemon juice
  • 1 box of pectin
  • 4 cups of sugar

Note: you need jars for this recipe

Instructions:

Step 1:

Rinse the dandelions and separate the yellow part from the green part. Remove the sepals by using a pair of scissors. You need 2 cups of this.

Step 2:

Place the 2 cups of dandelions in a bowl and add 4 cups of boiling water. Cover it and place it in the refrigerator. Let it steep for about 24 hours.

Step 3:

Do this step when your dandelions are ready. Bring a large pot of water to a boil and place a rack at the bottom. The pot should be big enough to accommodate the jars. Once it comes to a boil, place the jars into the boiling water along with the rings. This is to sterilize and prevent them from cracking. Let them foil for 5 minutes and remove using a pair of tongs.

Step 4:

After 24 hours, strain the petals and press as much of the juice out as possible.

Step 5:

Take 3 1/2 to 4 cups of dandelion tea and pour it into a saucepan. Add 2 tablespoons of lemon juice and 1 box of pectin. Whisk and bring to a boil. Slowly add the sugar and whisk. Once it comes to a rolling boil, continue to cook for about 2 minutes.

Step 6:

Ladle the hot mixture into the hot jars and leave about a quarter inch of head space. Take a damp wash cloth and clean the lip of the jars. Place your lids and rings and finger-tighten them.

Step 7:

Take the jars and put them back into the boiling water. Make sure there’s at least an inch of boiling water above the jars.

Step 8:

Once it comes to a strong boil, continue for 10 minutes. After that, remove them and place them on a towel. Leave them undisturbed for 24 hours.
