The beef and macaroni soup are simple and hearty to make as the weather starts to get cooler. There’s beef, tomatoes, macaroni, broth, and spices in this dish that makes it kid-friendly. It reminds me of a different version of chili, but without the beans and instead with macaroni pasta. This can be a one-pot recipe, but it’s based on preference if you want to boil the pasta in a separate pot. I would prefer cooking it separately so the pasta doesn’t soak up my broth when it’s cooking.
First, in a large pot, heat olive oil over medium heat. Add the onions and saute until tender. Then, add in the garlic and stir in the ground beef. Season with salt and pepper.
