This old-fashioned beef and macaroni soup have many names to it such as poor man’s soup, goulash, cowboy soup, and the list go on. Divas Can Cook recipe on YouTube shows how this recipe can come in handy if you need to use up leftover veggies from the week. The beef and macaroni soup are simple and hearty to make as the weather starts to get cooler. There’s beef, tomatoes, macaroni, broth, and spices in this dish that makes it kid-friendly. It reminds me of a different version of chili, but without the beans and instead with macaroni pasta. This can be a one-pot recipe, but it’s based on preference if you want to boil the pasta in a separate pot. I would prefer cooking it separately so the pasta doesn’t soak up my broth when it’s cooking.

Ingredients:

  • 1 tablespoon olive oil
  • 2/3 cup onions diced
  • 3 cloves garlic minced
  • 1 lb ground beef Use a good quality
  • 3 cups beef broth
  • 14.5 oz can diced tomatoes I use basil, oregano, garlic flavor
  • 29 oz. tomato sauce
  • 2 tablespoons of brown sugar enough to balance out the tartness of tomatoes
  • 1 1/2 teaspoon basil
  • 1 1/2 teaspoon oregano
  • 1 teaspoon thyme
  • 2 bay leaves
  • 2 cups dry elbow macaroni prepared al dente and drained.
  • Cheddar cheese shredded (topping)

Directions:

First, in a large pot, heat olive oil over medium heat. Add the onions and saute until tender. Then, add in the garlic and stir in the ground beef. Season with salt and pepper.
