Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • ½ cup fresh mushrooms, sliced
  • 1 teaspoon salt
  • 1 cup red bell pepper, diced
  • 1 jalapeno pepper, seeded and sliced
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon ground turmeric
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • 1 (28 ounces) can crushed San Marzano tomatoes or other high-quality plum tomatoes
  • ½ cup water, or more as needed
  • 6 large eggs
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Directions:

Step 1

Place a large heavy skillet pan on a stove over medium-high heat, then saute the onions and mushrooms, and season it with salt. Give it a good stir and cook until the mushrooms start to brown for about 10 minutes. Add in the bell peppers and jalapeno pepper, give it a good stir and cook until the peppers soften for about 5 minutes. Season it with cumin, paprika, turmeric, black pepper, and cayenne, stir and cook for about 1 minute.

Step 2

Add in the crushed tomatoes and water, then lower your heat to medium, and let it simmer uncovered until the veggies are softened while stirring occasionally for about 15 to 20 minutes. Crack the eggs into a small ramekin one by one before sliding it gently into indented areas of the sauce mixture. Season with salt and pepper, then cover and cook until the eggs are cooked to desired doneness. Garnish with feta and parsley.
