To make pistachio fudge, you need 6 ingredients – white chocolate chips, condensed milk, butter, pistachio extract, instant pistachio pudding mix, and pistachios. Start by melting all the ingredients together except for the pistachios using the double boiler method. Next, fold in the pistachios and transfer to your pan. Add more pistachios on top and all that’s left to do is let it chill in the refrigerator. That’s how easy this recipe is. Give it a try!

For the topping:
Fill a saucepan 1/3 of the way with water and bring it to a simmer. Once simmering, turn the heat to low and place a large bowl over the pot. Make sure the bowl doesn’t touch the water.
In the bowl, add the chocolate chips, condensed milk, butter, instant pistachio pudding mix, and pistachio extract. Mix until smooth and well combined.
Add pistachios to the mixture, then fold with a silicone spatula.
Line a baking pan with parchment paper and transfer the mixture. Spread evenly with a spatula. Sprinkle more pistachios on top and gently press into the fudge.
Place in the refrigerator for a minimum of 2 hours or overnight.
After 2 hours or more, get your cutting board, disposable gloves, a large knife, and a wet kitchen towel. Remove the fudge from the fridge and take off the parchment paper. Place the fudge on the cutting board.
Using a 5-wheel pastry cutter, score the fudge, then turn it 90 degrees and score again to create even squares. Cut the edges of the fudge with a large knife, wiping it with a wet kitchen towel after each cut.
Cut into smaller pieces using the scored lines as the guide. Wipe the knife with a wet kitchen towel after each cut. Serve and enjoy!
