Caramelize 3/4 cup sugar with 2 tbsp water in a pan over low heat. Turn off the heat once it browns and thicken, then add 4 tbsp chopped walnuts and 4 tbsp chopped almonds. Stir to combine, then pour the caramel mixture onto a nonstick surface. Let it cool and harden for 15 minutes. Once it hardens, crack it into small pieces and set it aside.

Add 3/4 cup heavy cream and 3 & 1/2 tsp powdered sugar in a bowl and whisk using a handheld mixer until soft peaks. Set it aside. Next, lay pound cake slices in the bottom of a casserole dish, then pour over some pineapple juice. After this, layer 1 cup of pineapple chunks, pour over the cream, then top everything with the cracked caramel nuts. (You can add more nuts if you want to.)
