In a medium-sized bowl, combine 1 teaspoon of oregano, 1 tablespoon of garlic powder, 1 tablespoon of chicken seasoning, crushed black pepper, 1 tablespoon of smoked paprika, and 1 tablespoon of onion powder. Mix all seasonings until well combined.
Place the chicken in a big bowl and add 3/4 of the seasoning mix. Rub the spices into the chicken until fully coated. Cover the bowl with a cling wrap and leave to marinate for an hour to 24 hours. This will help the marinate sip into the chicken.
Wash the potatoes thoroughly and peel the carrots. Slice the baby potatoes in half then the carrots into bite-sized pieces. Drizzle them with any preferred vegetable oil, then add the remaining seasonings. Mix them well until the vegetables are fully coated and the spices are evenly distributed. Cover the bowl with cling wrap and let them marinate for about 30 minutes.
Arrange the chicken in a roasting tray in a single layer, then add the marinated vegetables. Brush the chicken with some more oil. Place in a preheated oven at 340 degrees F for about 45 to 50 minutes.
