Start by preheating your oven to 356 F and lining your muffin tin with cupcake liners.
Sift together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, and 1/2 teaspoon of cocoa powder over a large bowl to remove any lumps. Next, add 1 cup of sugar and 1 teaspoon of instant coffee. Whisk everything until well combined.
Create a well in the center and add 1 cup of water, 1/2 cup of oil, 1 medium egg, and 1 tablespoon of vinegar. Whisk until smooth and free of lumps. Transfer to a liquid measuring cup.
Pour the chocolate mixture into each cupcake liner. Make sure not to put too much.
Place it inside the preheated oven and bake for about 18 to 20 minutes. To check if it’s done, you can press it with your finger. If it springs back when pressed, your cupcake is ready.
Once done baking, place the muffin tin with the cupcakes in a cooling rack to let them cool completely. Once cooled, remove each of them from the tin. You can add icing if desired. Enjoy!
