Eggs are the best breakfast food on any day. There are so many recipes you can make with them, and you can cook them in different ways. Recently, I tried this egg roll ups recipe by Eugenie Kitchen on Youtube. It was so delicious, and healthy too! The texture was so soft, and the flavors were fantastic. I didn’t know that just adding chopped onions, carrots, and spring onions to your eggs can make a big difference. Read on or watch the video below for full instructions.

Ingredients:

  • 3 eggs
  • 1 tablespoon of milk
  • 1 tablespoon of chopped carrot
  • 1 tablespoon of chopped onion
  • 1 tablespoon of chopped spring onion
  • 1/2 teaspoon of salt
  • pepper to taste

Instructions:

Step 1:

Crack 3 eggs in a bowl and add the milk. Season with 1/2 teaspoon of salt. Whisk until well combined.

Step 2:

Pass the egg mixture through a fine sieve to remove the chalaza.

Step 3:

Add the chopped onion, carrot, and spring onion to the mixture. Add pepper to taste. Stir until combined.

Step 4:

Lightly grease a pan with cooking spray and place over low heat. Once the oil is hot, pour 1/2 of the egg mixture and cook over low heat. Tilt the pan to spread it evenly. Cook until it’s half done.

Step 5:

Roll the omelet halfway up to the middle. If there is not enough oil, lightly grease the pan each time you roll it up.

Step 6:

Add 1/4 of the remaining mixture to the side of the unrolled omelet and cook until it’s half done. Roll halfway up again and move the egg roll to the center of the pan.

Step 7:

Pour the remaining egg mixture and cook until it’s half done. Finally, roll all the way, then transfer to a cutting board. Let it cool for a while, then slice it into pieces. Serve and enjoy!
