I love pecan pie so much, pecans are so delicious, they are my truly my favorite nut. Pecans are also on the approved keto list, so they are always a part of my diet. I was browsing recipes online today, and I found this amazing pecan cobbler video recipe tutorial, by Alli Smith, on YouTube, and it was immediately love at first sight. I had to get my stash of pecans out of the pantry and give this awesome recipe a try.

Ingredients For Pecan Cobbler Recipe:

  • 1 box of refrigerated pie crust
  • 2 and 1/2 cups of light corn syrup
  • 2 and 1/2 cups of packed brown sugar
  • 1/2 cup of melted butter
  • 4 teaspoons of vanilla extract
  • 6 eggs (lightly beaten)
  • 2 cups of chopped pecans
  • Cooking spray
  • 2 cups of pecan halves
  • Vanilla ice cream (for topping, optional, but highly recommended)

You begin by, making your first layer of the cobbler, consisting of a bottom crust and a layer of the caramel pecan filling, and bake in a 450°F oven for 14 to 16 minutes.

Then, you will take the cobbler out and add the other half of your caramel pecan sauce and reduce the heat to 350°F, and cook for another 30 minutes.
