This treat is heaven for all the peanut butter lovers out there. It’s soft, sweet, and yummy! I have been using this peanut butter cup cookie recipe by Joy of Baking for the longest time, and it never failed me. It’s always the crowd favorite on any occasion at home.

Preheat your oven to 350 degrees F and place the rack in the center. Grease your two -24 cup mini muffin tins with butter or vegetable spray.
In a large mixing bowl, add flour, baking soda, and salt. Whisk them until well combined.
In a bowl of your electric mixer or hand mixer, add the butter and beat until smooth. Next, add the sugar and whisk until it becomes light and fluffy. Then, add the peanut butter and beat, followed by the egg and vanilla extract. Make sure to scrape down the sides and bottom of your bowl as needed.
Add the flour mixture and whisk until well incorporated into the mixture.
Fill each muffin cup with 1 tablespoon of cookie batter.
Place the tray inside the preheated oven and bake the cookies for about 9 to 10 minutes or until they are lightly browned and firm on the edges, but still soft in the middle. While waiting, remove the foil wraps and paper liners from each of the peanut butter cups.
Once done baking, remove the cookies from the oven and place them on a wire rack. While still warm, gently press one peanut butter cup into the center of each one. Let them cool completely for about 1 to 2 hours before removing them from the muffin tray.
