Ingredients:

  • 2 tablespoons of olive oil
  • 4 large Vidalia onion (cut into 1/2″ slices)
  • 4 large tomatoes (cut into 1/2″ slices)
  • 1 1/2 teaspoons of salt (divided)
  • 1/2 teaspoon of black pepper (divided into 2)
  • 1/2 teaspoon of dried oregano
  • 1 1/12 cups of cheddar cheese (shredded)
  • 3/4 cup bread crumbs (made from stale bread)
  • 2 tablespoons and 1 tablespoon of melted butter separated

Instructions:

Step 1:

Preheat the oven to 375 degrees F.

Step 2:

Using the butter, grease a shallow 2-quart baking dish. Pour olive oil into a medium skillet and place over medium heat. Add the onions and let it cook for 5 minutes or until golden and soft. Season with a pinch of salt.

Step 3:

Layer half of the tomatoes on the bottom of the baking dish and top with half the onions. Season with 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Next, add half the oregano and half the cheddar. Repeat with the remaining tomatoes, onion, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, oregano, and cheddar.

Step 4:

Get a small bowl and combine the breadcrumbs, melted butter, and the remaining 1/2 teaspoon of salt. Sprinkle the mixture on top of the casserole.

Step 5:

Place in the oven and bake for 30 minutes or until the top is golden brown and the tomatoes are tender. Once done, remove from the oven and serve on a plate. Enjoy!
