Panera undoubtedly has an extensive menu of great dishes, but I wholeheartedly love their broccoli cheddar soup. Luckily, I found this copycat recipe from Kristin at Mini Slice of farm while browsing Youtube. I’m telling you, it tastes exactly like Panera’s. Ingredients:

  • 1/2 cup butter
  • 1 diced onion
  • 1 minced garlic clove
  • 1/2 cup flour
  • 4 cup chicken broth
  • 24 oz shredded cheese
  • 1 quart half-and-half (or 2 cups of milk + 2 cups of heavy cream)
  • 3 carrots, grated
  • 1 lb broccoli florets chopped
  • salt and pepper, to taste
  • a pinch of cayenne powder

Directions:

Step 1

Melt the butter in a soup pot, then add the diced onion. Saute on medium heat until translucent. After about ten minutes, season it with salt and pepper to taste and a pinch of cayenne. Add the minced garlic and continue to saute until fragrant. Then, add the grated carrots, and after five minutes, stir in the flour.

Step 2

Cook for one minute, then add the chicken broth and the broccoli. Mix well. After five minutes, add the half-and-half. Mix it well and let it come up to a simmer. After this, turn off the heat and add the cheese. Stir the cheese in gently. Once the cheese has wholly been stirred in, give it just one minute to melt. Serve and enjoy!
