Wash and peel the potato, then cut it into smaller pieces. Transfer these to a medium pot, pour enough water to submerge them, then boil. Once the potatoes are fork-tender, drain them well and transfer them to a blender. Next, cut half a white onion into smaller pieces as well, and add them to the blender together with the boiled potatoes. Add 1/4 cup of water and start to blend until mushy and smooth. After this, transfer the mixture to a large mixing bowl.

To that, add 1/2 cup of cornstarch, 1/2 tsp baking powder, and a pinch of salt. Mix well until there are no lumps. (Add more cornstarch if the consistency is too thin.) Once done, transfer the mixture to a piping bag, and squeeze uniform pieces into a parchment paper-lined baking sheet. After this, add another piece of parchment paper over the top, then press each piece to flatten it with the bottom of a cup. Place the tray in the oven at 275 degrees F for 12 minutes, then lower the temperature down to 230 degrees F and continue baking for another 30 minutes.
