When making a meal after a long, tiring, and busy day, it’s always better to make something that’s quick, simple, and easy without compromising the taste. It should still be amazingly delicious just like this recipe by The Slow Roasted Italian on YouTube.

Ingredients:

  • 1 pound lean ground beef
  • 1½ teaspoons kosher salt, divided
  • 2 teaspoons New Mexico chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon fresh ground black pepper
  • 1 (15 ounces) can of low-sodium black beans, rinsed and drained
  • 1 (14.5 ounces) can of fire-roasted diced tomatoes with garlic
  • 1 (15.25 ounce) can of niblet corn, rinsed and drained, or 1 cup of frozen corn
  • 1 (4 ounces) can of fire-roasted diced jalapenos
  • 1 cup jasmine rice
  • 2 cups water
  • 8 ounces Colby Jack cheese, shredded
  • Fresh cilantro, chopped, optional

Directions:

Step 1

Place a large and deep skillet on a stove over medium-high heat, once warm, add the ground beef and season it with half a teaspoon of salt. Stir and cook until the beef is cooked through, then drain off the excess drippings as needed. Season it with chili powder, cumin, paprika, onion powder, pepper, and the remaining teaspoon of salt, then give them a good stir until well combined. Add the black beans, tomatoes, corn, jalapenos, and rice to the beef mixture, then stir them all together until combined and evenly incorporated. Cover the skillet and bring it to a boil.

Step 2

Once the mixture is boiling, give it a good stir, and make sure there are no bits stuck to the bottom, reduce to simmer. Let it cook for about 15 minutes or until the rice is cooked through, then remove the cover halfway through the cooking time, and give it a good stir. Scrape the stuck bits at the bottom of the pan, then remove it from the heat, and sprinkle the cheese on top. Place the skillet under the broiler setting and broil it for about 2 minutes until the cheese is completely melted. Garnish with some cilantro, then serve and enjoy!
