In a small mixing jug, add 1/4 cup of olive oil, 1/3 cup of freshly squeezed lemon juice, 1 tsp of dried oregano, 1 tsp of onion powder, 2 cloves (2 tsp) of crushed garlic, 1 tsp of salt, and a bit of freshly cracked black pepper. Stir well. Next, place the chicken breasts into the slow cooker. Add the quartered small red potatoes and the trimmed and peeled baby carrots. After this, pour the marinade mixture that was prepared earlier all over the chicken, potatoes, and carrots.

Put the lid on the slow cooker and turn it on. If you set it on high, it will cook for about four hours and if you set it on low, it will be eight hours. Make sure that you don’t take the lid off while the chicken is cooking to make sure everything will be properly cooked.
