Heat a pot over medium heat, then add 2 fl oz sesame oil and sliced ginger. Fry until fragrant, then add the chicken. Continue to cook over medium heat. Next, add 2 tbsp rice wine (optional), then sear the chicken on both sides until browned before stirring. Once the chicken starts to brown, add the thinly sliced garlic cloves and season with a few dashes of ground black pepper. Mix well.

Now, add 3 cups of washed uncooked rice and stir well. After this, add 2 tbsp oyster sauce, 1 tsp of chicken stock powder, and 1 1/2 tbsp dark soy sauce. Mix well to combine. Next, add 3 cups of water, and 1 can of thinly sliced button mushrooms. Turn down the heat to medium-low, put the lid on, and cook everything for fifteen minutes. After fifteen minutes, add two stalks of chopped spring onion. Turn off the heat and mix everything well before serving.
