With the weather cooling down, the number of soup recipes is racking up on YouTube. This one-pot healing chicken vegetable soup by Honeysuckle on YouTube reminds me of soup that my dad would make for me on cold days when I was younger. The best thing about this recipe is that it requires just one-pot to make, and that’s what keeps all of the flavors packed in. It’s such a cozy soup to make because it’s healthy and made from scratch. It’s a simple soup that can be served with leftovers. I love this type of soup with a side of rice to add a bit of carb into the mix.



  • 1/2 onion, chopped
  • 2 carrots, chopped
  • 2 celery, chopped
  • 2 teaspoons turmeric powder
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 1.5 lbs chicken thighs, skin off
  • 32 Oz bone broth plus 1 cup water
  • 3 cups chopped kale
  • Salt and pepper to taste
  • Juice from half a lemon


First, in a pot, drizzle oil and sautee onions until translucent. Add celery, carrots, and a pinch of salt. Sautee them until caramelized, and add ginger, turmeric, and garlic.
