Add a drizzle of olive oil and 2 tbsp butter in a Dutch oven and turn the heat on right between medium and medium-high heat. Once heated through and the butter is melted, add the sliced onions and season with a pinch of salt. Let the onions cook until they break down, stirring them frequently. After about 20 minutes, add the minced garlic and 1 tbsp brown sugar. Cook for another minute.
Now, add 4 cups of beef stock, 1/2 cup heavy cream, 1 tbsp garlic and herb seasoning, and some fresh thyme. Stir together and let it come to a boil. Once boiling, season it with some salt, then add the rigatoni. Cook them until the rigatoni is nice and al dente. After this, stir in the grated parmesan, ground black pepper, and freshly chopped parsley. Let it cook for two minutes, turn it off, put the lid on, and just let it sit for a few minutes. Serve and enjoy!
