Put your corned beef brisket, fat side up, in a dutch oven and add some water to it. Season generously with salt and ground black pepper, then add the red onion. Put the lid on, cook it for an hour per pound, make sure it doesn’t dry out, and check if it’s done enough by poking it with a fork. While waiting, go ahead and prep your veggies.
