This one-pot chicken rice recipe by Banglar Rannaghor looks flavorful and I love the idea of letting the chicken marinate in the same pot as the rice. This helps the rice soak up all of the flavors and juices from the chicken. The chicken looks super tender and moist. I’ve never cooked rice with coconut milk before, but I love how this recipe doesn’t require a bunch of pots to wash in the end. If you’re looking for a quick dinner recipe that has carbs and protein, this is perfect for those nights to sit back, relax, and enjoy.

Ingredients:

Chicken Marinate:

  • ½ kg boneless chicken
  • ½ tsp salt
  • 2 tbsp plain yogurt
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • ¼ tsp turmeric
  • ½ tsp red chili

One-Pot Preparation:

  • 3 tbsp cooking oil
  • ½ cup sliced onion
  • 2 bay leaves
  • ¼ tsp ginger paste
  • 1 ½ cup-soaked basmati rice
  • 1 tsp salt
  • 1 ½ cup hot coconut milk
  • 1 cup hot water
  • ½ tsp garam masala
  • 1 ½ tbsp fresh coriander
  • 1 tsp ghee

Directions:

First, marinate the chicken with the seasonings listed in the ingredients list and let it marinate for 15 minutes. Then, cook the chicken until it’s brown and remove them from the pot. In the same pot, add sliced onions, a splash of water, bay leaves, ginger paste, rice, hot coconut milk, and water. Mix everything.

Next, place the cooked chicken back into the pot and cook for about 10-15 minutes with the lid on.

I’m imagining all of the flavors that the rice has from the chicken and seasoning. I need to make this chicken rice recipe because it reminds me of curry. I haven’t had curry in so long, but this is similar to an Indian chicken curry rice dish. It has all of the seasonings from an Indian dish too.
