Ingredients:

Seasoning Mix:

  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp crushed red pepper flakes
  • 2 tbsp olive oil

Steak Fajitas:

  • 3 large bell peppers, sliced
  • 1 medium red onion, sliced
  • 8 oz mushrooms, sliced
  • 2 cloves of garlic, minced
  • 1 1/2 lb flank steak, thinly sliced
  • 1 tbsp Worcestershire sauce
  • 1/4 cup lime juice
  • 10 small flour tortillas, for serving

Directions:

Step 1

To start, make the seasoning mix. In a bowl, combine 2 tsp ground cumin, 2 tsp chili powder, 1 tsp onion powder, 1 tsp salt, and 1 tsp crushed red pepper flakes. Mix well and set aside. Next, slice three large bell peppers, one medium red onion, and 8 oz of mushrooms, then juice two limes. After this, heat 2 tbsp cooking oil in a large skillet over medium-high heat. Once heated through, add in all of the sliced veggies and saute until softened (about seven to ten minutes). Meanwhile, thinly slice against the grain a 1 1/2 lb flank steak, then set aside.

Step 2

Back to the pan, season the veggies with half of your fajita seasoning mix, then add two cloves of minced garlic. Stir and let everything cook for one to two minutes. After this, remove the veggies from the pan and set aside. In the same skillet, add the sliced steak and sprinkle in the rest of the seasoning along with 1 tbsp Worcestershire sauce. Cook the meat until browned, then add back the veggies. Lastly, drizzle in the lime juice and toss everything together. Serve with some flour tortillas.
