Ingredients:

  • 4 – 5 potatoes (quartered)
  • 2 lb (900g) chicken thighs and legs (bone in and skin on)
  • 1 large onion (cut into large chunks)
  • 5 – 6 tbsp olive oil (divided)
  • 5 -6 garlic cloves (unpeeled)
  • 1 tsp dried oregano
  • fresh rosemary
  • 1 tsp dried thyme
  • 1 & 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt (or to taste)
  • 1 tsp black pepper
  • 1 tbsp lemon juice
  • 1/2 tsp cumin

Directions:

Step 1

In a large bowl, add 4 tbsp olive oil, 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1 & 1/2 tsp paprika, 1/2 tsp cumin, 1 tsp dried oregano, and 1 tsp thyme. Mix well to combine. Next, add the chicken thighs and legs to the bowl of the spice mixture. Mix until well coated. Cover it with a cling wrap. Marinate for at least one hour. After this, cut 4 – 5 potatoes into quarters, then transfer them to a bowl. add some fresh rosemary, 1 tsp salt, and 1 – 2 tbsp olive oil. Toss it, then transfer them to a tray. Add the marinated chicken.

Step 2

After this, cut 1 onion into large chunks. Add the chopped onions into the tray followed by 6 – 7 unpeeled cloves of garlic. Put some more rosemary into the tray also. Place them in the oven at 425 degrees F for about fifty to sixty minutes. After sixty minutes, pull it out of the oven and transfer it to a plate to serve.
