Whenever the weather is a little gloomy, I always serve this heartwarming Italian chicken and potatoes from Laura in the Kitchen on Youtube. This comforting recipe all cooks in one pan and will surely warm up the dinner table. I love how herby it is and how the chicken just falls off the bone. Ingredients:

  • 2 tbsp olive oil
  • 1 1/2 lb chicken drumsticks, skin removed
  • 1 yellow onion, roughly chopped
  • 2 bell pepper, chopped
  • 3 cloves of garlic, minced
  • sprinkle of slap your mama seasoning (optional)
  • salt and pepper, to taste
  • 14 1/4 oz can of diced tomatoes
  • 1 cup of chicken stock
  • 3 tbsp chopped parsley
  • 3 large potatoes, peeled and cut into large chunks
  • a few handfuls of thin green beans, trimmed and washed

Directions:

Step 1

Heat 2 tbsp olive oil in a large pan. Next, season the chicken with some garlic and herb seasoning and a touch of slap your mama seasoning on both sides. After this, add the chicken to the pan and sear on all sides.  In the meantime, prep and chop all the remaining ingredients and set them aside. Set the chicken aside once they develop color, then add the chopped bell pepper and onions to the same pan. Saute until soft (five to six minutes). After this, add the minced garlic and continue to saute for another 30 seconds. Next, add the diced tomatoes, 1 cup of chicken stock, then add the chicken back along with the chopped potatoes.

Step 2

Partially cover the pan with its lid and simmer it on medium-low heat for about 45  minutes to one hour. In the last ten minutes of cooking time, add the green beans, then cover it and let everything cook. Once done cooking, garnish with some chopped parsley, then serve.
