Ingredients:

  • 3 medium chicken thighs (bone-in, skin-on)
  • 2 chicken wings (bone-in, skin-on)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • salt, pepper, and paprika (to taste)
  • 4 medium russet potatoes (peeled and diced into 1-inch cubes)
  • 2 cups of baby carrots (halved, longways)
  • 1 medium onion (diced)
  • 5 cloves garlic (minced)
  • 1/2 cup coconut aminos (soy sauce substitute)
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 1 cup chicken stock

Directions:

Step 1

Place a cast-iron skillet over medium heat. Add 1 tbsp olive oil and 2 tbsp butter, and melt it down. Preheat the oven to 425 degrees F. Next, season the chicken thighs and wings with salt, pepper, and paprika. Place the thighs and wings into the skillet. Cooked them until both sides are golden brown. Transfer them to a plate after they are nicely cooked. After this, in the same skillet, add the baby carrots that are cut in half, and the diced potatoes. Season with some salt and pepper. Cook them just until the skin has a nice brown color. (Stir them while cooking.) After cooking, transfer them to a plate, then set them aside. Again in the same pan, saute the diced onion for about three minutes. While waiting for the onion to cook, in a mixing jug, add 1 cup chicken broth, 1/2 cup coconut aminos, 1/4 cup ketchup, and 1/2 cup honey. Whisk it well to combine. Back to the onion, add the minced garlic (add a little bit of oil if the skillet becomes dry), and stir them for about a minute.

Step 2

Add the sauce you made earlier into the pan and raise the heat to medium-high. Simmer it to reduce slightly. Add the carrots and potatoes and mix them with the sauce, then nestled in the chicken pieces. After this, place the pan in the preheated oven at 425 degrees F for about 15 to 20 minutes.
