Ingredients:

  • 8 oz baby broccoli
  • 10 oz sugar snap peas
  • 6 spring onions (sliced thickly on the diagonal)
  • a small handful of coriander (leaves picked)
  • 1 tbsp sesame seeds

For the chicken:

  • 8 chicken thighs
  • 6 cloves of garlic
  • 3 tbsp honey
  • 3 tbsp apple cider vinegar
  • 3 tbsp soy sauce

Directions:

Step 1

In a bowl, put the chicken thighs then add 3 tbsp of apple cider vinegar, 3 tbsp honey, and 3 tbsp of soy sauce. Grate 6 cloves of garlic and add it to the chicken. Season with a bit of salt and pepper, then mix well. In a pan, put a bit of oil, then lay down the chicken, skin side first. Pour the marinade on top of the chicken. Next, slice the baby broccoli diagonally as well as the spring onions. After this, flip the chicken to the other side, then add the veggies, nestling them around the pan.

Step 2

Add some sugar snap peas and also a bit of water. Lastly, add a lid or another pot to cover the pan. Leave it to cook for about four to five minutes until the chicken is cooked all the way through.
