Ingredients:

  • 1 lb medium ground beef
  • 1 tbsp olive oil
  • 1/2 medium onion, chopped
  • 3 cloves of minced garlic
  • 1/2 medium red bell pepper, chopped
  • 1 tsp salt
  • 2 tsp ground black pepper
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp chili powder
  • 1/2 tsp hot pepper flakes
  • 1 medium can of diced tomatoes
  • 1 medium can of black beans, drained and rinsed
  • 1 cup beef broth
  • 3 cups wide egg noodles
  • 1 cup Tex-Mex cheese
  • 2 tbsp chopped parsley, for garnish

Directions:

Step 1

Heat 1 tbsp olive oil in a large skillet over medium-high heat, then add 1 lb medium ground beef. Break up the ground beef and cook until browned and cook through. Once browned, shove the ground beef to one side and add the chopped onion and three cloves of minced garlic. Stir fry until fragrant. Next, add the chopped red bell pepper, saute for a bit, then mix everything together. Season with 1 tsp salt, 2 tsp ground black pepper, 1 tsp cumin, 1 tsp smoked paprika, 1 tbsp chili powder, and 1/2 tsp hot pepper flakes. Stir around until combined.

Step 2

Next, add 1 medium can of diced tomatoes, 1 medium can of drained black beans, and 1 cup of beef broth. Gently stir, then add 3 cups wide egg noodles. Mix again and let everything come to a gentle stir covered (about ten to twelve minutes). After this, transfer to a serving plate and add 1 cup Tex-Mex cheese and 2 tbsp chopped parsley. Serve and enjoy!
