Ingredients:

  • 4 chicken breasts
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp paprika
  • 1 tbsp oil
  • 4 strips of streaky bacon
  • 1 onion, peeled and chopped
  • 2 cloves of garlic, peeled and minced
  • 2 tbsp Dijon mustard
  • 1 cup of chicken stock
  • 1/2 cup heavy cream
  • 1 cup of finely shredded kale
  • 1/2 cup grated parmesan
  • 10 – 12 pecans, roughly chopped

Directions:

Step 1

Flatten the chicken breasts between two sheets of parchment paper lightly using a rolling pin. Next, season each side with 1/4 tsp salt, 1/4 tsp ground black pepper, and 1/4 tsp paprika. After this, heat 1 tbsp olive oil in a large pan over medium heat. Once heated through, add four strips of streaky bacon and fry until crispy. After cooking, remove them from the pan and slice them into thin strips. Set aside. Back to the pan, increase the heat to medium-high then add the chicken breasts. Fry for four to five minutes on each side or until golden brown.

Step 2

Next, move the chicken breasts to one side, then add the diced onions and the minced garlic. Saute for three to four minutes. After this, add 2 tbsp Dijon mustard, 1 cup of chicken stock, and 1/2 cup heavy cream. Mix together, then arrange the chicken in the pan. Bring everything to a boil, then add the shredded kale. Mix well, then simmer for about ten minutes until the sauce has thickened a bit. After ten minutes, mix in 1/2 cup grated parmesan, then remove from heat. Serve with the cooked bacon and chopped pecans.
