Ingredients:

  • 4 boneless skinless chicken thighs
  • 2 tsp Italian seasoning
  • 1 tbsp chicken bouillon powder
  • slap yo mama seasoning (or any seasoning of choice)
  • salt and ground black pepper, to taste
  • 1 medium yellow onion, minced
  • 3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 1/2 cups of long-grain rice
  • 2 3/4 cups chicken stock
  • 1/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • freshly chopped parsley

Directions:

Step 1

Season your chicken thighs on both sides with slap yo mama seasoning, salt, ground black pepper, Italian seasoning, and 1 tbsp chicken bouillon powder. Next, heat 2 tbsp olive oil in a skillet, add the seasoned chicken, and cook until brown. While waiting for the chicken, go ahead and chop the other ingredients and set them aside. Once the chicken thighs are done cooking, remove them from the pan, and add 2 tbsp butter to the same pan. Add the chopped onions and minced garlic. Saute them until translucent, then add the rice.

Step 2

Toast the rice a bit, then add 2 3/4 cups chicken stock, and 1/4 cup heavy cream mixture. Mix well, then add 1/4 cup of grated parmesan cheese and a pinch of salt. Now, place the chicken back into the pan and bring it to a boil. Once it boils, cover it with its lid and cook it on low for 25 to 30 minutes. After cooking, garnish it with some freshly chopped parsley and serve.
