Ingredients:

  • 2 large (1 1/2 lb) boneless skinless chicken breasts
  • 4 tbsp olive oil, divided
  • 2 tbsp lime juice
  • 1 tsp ground chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp fine sea salt, plus more to taste
  • 1/2 tsp ground black pepper
  • 3 bell peppers: red, yellow, and green, sliced into 1/4″ thick slices
  • 1 medium onion, thinly sliced

To serve:

  • lime wedges
  • cilantro, garnish
  • 8 flour tortillas, warmed
  • sour cream, salsa, guacamole, or sliced avocado
  • shredded cheddar cheese, Monterey Jack, or Mexican cheese

Directions:

Step 1

To start, prepare the marinade for the chicken. In a large mixing bowl, squeeze 2 tbsp of fresh lime juice, then add 2 tbsp olive oil, 1 tsp ground chili powder, 1 tsp paprika, 1 tsp ground cumin, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp fine sea salt, and 1/2 tsp ground black pepper. Mix well. Next, cut your chicken in half lengthwise and place them in the marinade. Set aside and let it rest at room temperature. After this, prepare and cut your veggies accordingly and set them aside.

Step 2

Now, heat 1 tbsp olive oil in a large skillet over medium heat, then place the marinated chicken. Saute for three to five minutes on each side or until brown. Once cooked, transfer them aside on a chopping board, allowing them to cool before cutting. Next, add another 1 tbsp olive oil to the same skillet, then add the sliced onion and bell peppers. Saute them over medium heat until softened. Season with some salt and pepper to taste. Slice the chicken thinly and add them back to the pan. Toss everything to combine. Serve with some tortillas and your toppings of choice.
