This weeknight wonder recipe from The Domestic Geek on Youtube comes together in just 30 minutes! It’s loaded with chicken, bell peppers, and beans that will totally satisfy the whole family. It’s also flexible enough to be vegetarian by switching the chicken out with more beans. Watch the video below to learn the full recipe.

Ingredients:

  • 1 tbsp oil
  • 2 boneless skinless chicken breasts, cut into 1″ cubes
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 & 1/2 cups long-grain white rice
  • 1 15 oz can black beans, drained and rinsed
  • 3 cups chicken broth
  • 1 19 oz can diced tomatoes
  • salt and pepper, to taste

Directions:

Step 1

Heat 1 tbsp oil in a pan over medium-high heat. Once the oil is hot enough, go ahead and add the chicken. Season them with salt and pepper and let them cook away for five to six minutes. Once the chicken is golden, add the diced onion, red bell pepper, green bell pepper, and yellow bell pepper. Let these cook for two to three minutes while stirring frequently.

Step 2

After three minutes, season everything with chili powder and garlic powder. Let the spices toast up for a minute to make them nice and fragrant, then add the rice and black beans. Now, add the chicken broth and diced tomatoes. Mix together and let it come to a boil. As soon as you see bubbles forming, reduce your heat to low. Put on the lid and let it cook for between 15 to 17 minutes.
