Dinners shouldn’t always be over the top; sometimes, simple is the way to go. For that, I highly recommend this recipe I found on Youtube. This beef taco skillet from The Domestic Geek is a one-pan recipe that comes together quickly. It’s easy, flavorful, and mouthwatering – I’m sure your family, especially the kids, will love it!

Ingredients:

  • 1 tbsp oil
  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 cup long-grain white rice
  • 1 15 oz can of black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 2 & 1/2 cups chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro leaves
  • 1 lime, cut into wedges
  • salt and pepper, to taste

Directions:

Step 1

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the ground beef and season with salt and pepper. Cook it until it’s no longer pink. Once the ground beef is cooked, add the chopped onion, and the bell pepper. Let everything cook for another three minutes until they start to soften up.

Step 2

Now, add the tomato paste, chili powder, dried oregano, and garlic powder. Stir to combine. Next, add the rice, black beans, corn kernels, and chicken broth. Stir well and bring everything to a boil. Once it started to boil, reduce the heat to low. Cover the skillet with its lid, and let it cook for 15 minutes.
