Ingredients for Beef & Rice Enchilada:

  • 1 cup of long-grain rice
  • 1 pound of lean ground beef
  • 1 tbsp of tomato chicken bouillon powder
  • ½ tsp of salt, for the beef
  • 1 tsp of onion powder
  • 1 tsp of garlic powder
  • ½ tsp of ground cumin
  • ½ tsp of smoked paprika
  • 2 cups of water
  • 10oz of your favorite enchilada sauce
  • 6-8oz of mild cheddar cheese
  • Pepper, to taste

Step 1

Place a deep and large pan on a stove over low heat, then preheat some cooking oil, and toast the rice until aromatic and light golden brown. Push the rice to one side, then add the ground beef, and break it apart.

Step 2

Season it with salt and smoked paprika, then give them a good mix, and cook them until nice and brown. Add some onion powder, then mix them with the rice, and turn the heat to medium or medium-high at this point.

Step 3

Add the bouillon powder, ground cumin, water, and some tomato sauce or paste as well, then give them a good mix, and then place the lid on the pan. Allow them to cook for about 12 minutes, then move the mixture around, and add the enchilada sauce.

Step 4

Sprinkle the cheese on top, then add the chopped scallions, and put the lid back on the pan. Continue to simmer the mixture for an additional 3 minutes until the cheese is bubbly and melted, then serve, and enjoy!
