Ingredients:

  • 1 cup butter, room temperature
  • 2/3 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 cup chopped pecans
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2/3 cup powdered sugar, for rolling

Directions:

Step 1

In a bowl, add 1 cup room temperature butter, 2/3 cup powdered sugar, and 1 tsp vanilla extract. Blend it for two to three minutes using a handheld mixer. Once the texture is nice and light, add 2 cups of all-purpose flour, 1 cup of chopped pecans, and 1/2 tsp salt. Continue to blend until you get a nice thick dough (two to three minutes.)

Step 2

Scoop and roll the dough into balls and place them on a baking sheet lined with parchment paper. After this, place the cookies in the refrigerator for 30 to 45 minutes until they’re chilled, then place them in a preheated oven at 350 degrees F and bake them for about 12 to 14 minutes. After baking, let them cool for two to three minutes just until they’re cool enough to handle, then roll them in a bowl of powdered sugar.
