First, grind 1 & 1/3 cups of rolled oats to a flour in a food processor. Set it aside. In a bowl, add 1 tbsp ground flax seed and 3 tbsp milk. Mix it and let it rest for five minutes to thicken. Meanwhile, chop your pecan nuts and cranberries. Once the mixture has thickened, it’s ready to use. Add 1 cup of old-fashioned oats, ground oat flour, 3/4 tsp baking powder, 1 tsp cinnamon, a pinch of nutmeg, 1/4 tsp salt, 1/3 cup of granulated sugar, 1 tsp vanilla extract, and 1/3 cup of melted coconut oil. Mix well to combine, then gently fold in the nuts and cranberries.

Scoop 2 tbsp of the mixture, form it into a ball with your hands, then create a cookie shape that’s about 1 & 1/2 cm thick. Place it in a parchment paper lined baking tray. Repeat this step until you finished the oats mixture. Bake at 350 degrees F oven for 20 minutes. Allow them to cool completely before serving.
