Are you looking for a snack recipe that’s healthy but still tastes incredible? You’re in the right place! These oatmeal cookies from Food Metrica on Youtube are one of the best recipes I’ve ever tried. These cookies are crunchy and chewy and come together in one bowl. Your family will surely love this. Make these goodies today by watching the video below.

  • 1 & 1/3 cups of rolled oats (grind to flour)
  • 1 cup rolled oats
  • 3/4 tsp baking powder
  • 1 tsp cinnamon
  • a pinch of nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup melted coconut oil
  • 1/3 cup granulated sugar
  • 1 tbsp ground flax seeds
  • 3 tbsp milk (or water)
  • 1/4 cup chopped pecan nuts
  • 1/4 cup cranberries

Step 1

First, grind 1 & 1/3 cups of rolled oats to a flour in a food processor. Set it aside. In a bowl, add 1 tbsp ground flax seed and 3 tbsp milk. Mix it and let it rest for five minutes to thicken. Meanwhile, chop your pecan nuts and cranberries. Once the mixture has thickened, it’s ready to use. Add 1 cup of old-fashioned oats, ground oat flour, 3/4 tsp baking powder, 1 tsp cinnamon, a pinch of nutmeg, 1/4 tsp salt, 1/3 cup of granulated sugar, 1 tsp vanilla extract, and 1/3 cup of melted coconut oil. Mix well to combine, then gently fold in the nuts and cranberries.

Step 2

Scoop 2 tbsp of the mixture,  form it into a ball with your hands, then create a cookie shape that’s about 1 & 1/2 cm thick. Place it in a parchment paper lined baking tray. Repeat this step until you finished the oats mixture. Bake at 350 degrees F oven for 20 minutes. Allow them to cool completely before serving.
