Ingredients:

  • 2 & 1/2 cups of rolled oats (not quick or instant)
  • 2 tbsp brown sugar
  • 1/4 cup flaked sweetened coconut
  • 1 cup of mixed chopped toasted walnuts, almonds, pecans, dried cherries, and chocolate chips (or add anything you like/have)
  • 1/3 cup vegetable oil
  • 1/3 cup honey
  • 1 tsp vanilla extract

Directions:

Step 1

Preheat your oven to 325 degrees F and line your 9×9 baking pan with two crisscrosses of parchment paper. Next, combine 2 & 1/2 cups of rolled oats in a big mixing bowl followed by 1/4 cup of sweetened flaked coconut and 2 tbsp of brown sugar. Set it aside while you prepare the extras or other ingredients.

Step 2

For your extras, you can do combinations of chopped toasted walnuts, almonds, pecans, dried cherries, and chocolate chips, or you can customize your own. Once you have your extras, add them to the rolled oats mixture and mix them up. After this, add 1/3 cup vegetable oil, 1/3 cup honey, and 1 tsp vanilla extract. Mix them one more time to combine all the ingredients, then transfer the mixture to the lined baking pan. Spread the mixture evenly, press down all over, and get them into the corners. Once ready, place it in the preheated 350 degrees F oven and bake for 30 minutes. After baking, remove from the oven, and let it cool completely before removing to the pan. Once cooled down completely, cut it into bars.
