Ingredients:

  • 1 cup  self-rising flour
  • 1 cup desiccated coconut
  • 4 oz butter, melted
  • 3/4 cup caster sugar
  • 2 large eggs
  • 1/2 cup full cream milk
  • pinch of salt
  • 2 tsp vanilla essence

For the lemon icing:

  • 1 & 1/2 cups icing sugar
  • 4 & 7/8 tbsp butter, softened
  • 2 – 3 tbsp freshly squeezed lemon juice
  • zest of 1 – 2 lemons, for garnish

Directions:

Step 1

Preheat the oven to 350 degrees F. In a small saucepan, add 4 oz melted butter, 1/2 cup full cream milk, 2 tsp vanilla, 2 large eggs, and 3/4 cup sugar. Whisk well until the eggs are combined. Next, add a pinch of salt, 1 cup desiccated coconut, and 1 cup self-rising flour. Continue whisking until the ingredients are fully combined. Pour the batter into a pan lined with parchment paper and spread evenly. Place it in the preheated oven and bake for 20 to 25 minutes. After baking, remove it from the pan and cool it completely.

Step 2

For the lemon icing, combine the softened butter, the icing sugar, and the lemon juice in a bowl. Mix it well until smooth consistency. Spread this all over the lemon cake and garnish with some lemon zest on top.
