Ingredients:

  • 3 cups of old-fashioned rolled oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 cup organic buttermilk
  • 2 eggs, beaten
  • 1/2 cup applesauce
  • 1 large apple, chopped
  • 1/4 cup raisins

Directions:

Step 1

Preheat your oven to 350 degrees F and spray some oil into a 12-cup muffin pan. Next, in a large bowl, add 3 cups of rolled oats, 1 tsp of baking powder, 1/2 tsp of cinnamon, 1 cup of full-fat organic buttermilk, 1/2 cup of applesauce, and 2 beaten eggs. Mix well until everything is combined. After you have everything fully mixed, add the chopped apples next along with 1/4 cup of raisins. Gently stir everything until incorporated.

Step 2

Scoop out the mixture and put them on each muffin cup. Make sure to fill each as evenly as possible. Once you got your muffins all ready to go and the pan is full, place it in the preheated oven at 350 degrees F and bake for 25 to 30 minutes.
