Ingredients:

  • 1 pound of macaroni pasta, cooked
  • 1 (24 ounces) can of crushed tomatoes
  • 1 pound of ground beef
  • 1 piece of onion, chopped
  • 1 piece of green bell pepper, diced
  • 1 tablespoon of garlic,  chopped
  • 1 (8 ounces) bag of frozen corn
  • 1 (8 ounces) bag of frozen green peas
  • 8 ounces of shredded cheddar cheese, divided
  • Freshly chopped parsley
  • Salt, to taste
  • Pepper, to taste
  • Cooking oil

Directions:

Step 1

Place a large pot on a stove over medium-high heat, then heat up some oil, and add the chopped onions and diced bell peppers. Stir them around and let them cook for a few minutes or until tender and translucent. Add the chopped garlic and ground beef, then break the beef, and stir them together until well combined. Let it cook for a few minutes or until the beef are nice and brown. Add the tomatoes, corn, and peas, then give them a good stir, cover and let it simmer for about 10 minutes.

Step 2

After 10 minutes, add the freshly chopped parsley, then stir them together until well combined. Add the cooked pasta and 2 ounces of the shredded cheddar cheese, then season them with salt and black pepper to taste. Mix them all together until well combined and uniform, then lightly grease a casserole dish, and pour the pasta and beef mixture into it. Top it with the remaining cheese, then put it in a preheated oven, and let it bake at 350° for about 15 to 20 minutes or until the cheese is bubbling hot. Serve with fresh-baked bread and salad, and enjoy!
