Place a 5-quart Dutch oven over medium heat. Once hot, add a little bit of oil, then drop the meat in chunks. Do not break it up. Cook for about 7 minutes without touching it.
After 7 minutes, gently turn the meat, then add the carrots, celery, and onion. Mix and cook for about 3 minutes.
Season with creole seasoning and beef bouillon and mix well. Next, add diced red pepper, pepper, thyme, onion powder, minced garlic, herb seasoning, and cornstarch. Mix everything well.
Add crushed tomatoes and some hot water, followed by your fresh herbs. Mix them, and allow to simmer for about 30 minutes on medium-low heat. Cover it until it starts to boil, then partially cover it to let the steam escape.
After 30 minutes, make a taste test and adjust seasonings if needed. Add the potatoes, frozen vegetables, Worcestershire sauce, and sugar. Mix, then place the lid back. Let it simmer on low for about 20 minutes.
Remove herbs before serving. Enjoy!
