Have you heard of this old-fashioned shoo fly pie recipe before? It has a gooey molasses base and a delicious buttery shortbread crumbles topping. You don’t need any fancy ingredients to make this recipe by 12 Tomatoes at home. Most of them are probably already in your pantry. Give it a try – it is surely different from all the desserts you have tasted before.

For this recipe, you can either choose homemade or store-bought pie crust. Either works well, but if you don’t have much time, go for the store-bought one. Make sure to let it cool completely before you slice and serve it. You can top it with whipped cream, ice cream, or a sprinkle of cinnamon.

Start by preheating your oven to 400F.
This step is optional. Place the pie crust in a pie dish, then parbake for about 10 to 12 minutes. Once done, remove it from the oven and let it cool.
In a large bowl, add the molasses and hot water. Whisk to combine, then stir in the baking soda and salt. Set aside to cool for a little bit.
Once cooled, stir continuously while pouring lightly beaten egg. If it is too hot, the egg could curdle. Pour the mixture into the cooled crust.
In another large bowl, add the flour, brown sugar, and cinnamon. Cut in the butter until the mixture becomes coarse.
Sprinkle the topping over the filling.
Bake for 15 minutes at 400F, then lower the heat to 350F and bake for another 30 minutes or until the filling has set. Cool completely before slicing.
