This candy became popular decades ago as it is easy to make, uses few inexpensive ingredients, and does not require baking. We all love a quick homemade candy recipe, right? They are soft and filled with creamy peanut butter on the inside.

To make these potato candies at home, you will only need 5 ingredients – potato, vanilla extract, salt, powdered sugar, and peanut butter. You can also use mashed potato. Easy Potato Candy Ingredients

  • large baked potato (cooled, peeled, and brown spots removed)
  • vanilla extract
  • dash of salt
  • 2 cups of powdered sugar (plus more)
  • creamy peanut butter

How to Make Peanut Butter Potato Candy

Step 1:

Make sure your potatoes are cool enough that they are not going to melt the powdered sugar. In a bowl, add the baked potatoes, a little bit of vanilla extract, and salt. Mix until well combined.

Step 2:

While mixing, add the powdered sugar one cup at a time until its creamy and thick.

Step 3:

Dust your work surface with powdered sugar and get a handful of the mixture.  Make it into a ball, then roll out using a rolling pin.

Step 4:

Evenly spread peanut butter over it. Gently roll it from the top to bottom. Once it’s rolled, stretch it out. Dust your work surface to keep it from sticking. Let it cool down a minute.

Step 5:

Gently slice the roll into pieces. Wipe your knife every time you cut it to keep the shape of the candy. Place on a plate and serve. If you are not going to eat it right away, cover it and place in the refrigerator.
