To make these classic candies, you only need 6 simple ingredients – sugar, corn syrup, water, egg whites, vanilla, and pecans. They are very easy to make and ready in just a few minutes. Place a 2-quart saucepan over low heat, and add sugar, corn syrup, and water. Stir constantly until it comes to a full boil and when the sugar dissolves. Once boiling, stop stirring and continue cooking until it reaches 260ºF on a candy thermometer.
When it’s almost at 260ºF, beat the egg whites using an electric mixer on high speed until stiff peaks form.
Continue beating the egg whites on medium speed while slowly pouring the hot syrup. It may take a few minutes before it thickens and holds its shape. Once it can hold its shape, when the beater is lifted, mix in the vanilla and nuts.
Immediately take your two spoons, scoop the mixture into small balls, and drop them onto parchment paper. Let them stand at room temperature to completely cool. After cooled, flip them over so that they will dry and become firm on both sides.
