This old-fashioned oatmeal cake recipe by Taste and Tell on YouTube is a simple cake and family recipe. I’m not a big oatmeal person, but I’ve been trying to find ways to enjoy it because I know it’s filling and good for you. I do love oatmeal creme pies. This is a type of cake I wouldn’t mind having in the morning with a cup of black coffee in the morning to balance the sweet flavors out with a dark beverage. There’s nothing special about this recipe, but it’s simple for those that like oatmeal and want to make a dessert.

Ingredients:

  • 1 1/2 cups hot water
  • 1 cup old fashioned oats
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup butter, at room temperature
  • 2 eggs
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Topping:

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 tablespoon milk
  • 1 cup coconut

Directions:

First, preheat the oven to 350 degrees F. Spray a 9 x 13″ baking dish and set aside. Combine the water and oatmeal and allow to soak while preparing the other remaining ingredients. Cream together the butter and both sugars. Beat in the eggs. In another bowl, mix together the flour, cinnamon, baking soda, and soda. Next, once the cake is finished baking, turn the oven to broil. Combine the butter, brown sugar, and milk in a saucepan. Bring to a boil and add the coconut. Pour over the cake spread, then broil for 1 minute.

Overall, this would be a healthy cake to have if you’re craving something sweet, but do not want all of the unhealthy ingredients. I think it’s a good idea to try when I am on a diet because I have a sweet tooth.
